Banana Bread

After trying many different recipes, we have finally created the ultimate banana bread. It is gluten free, milk free and does not have any added sugar!

We're getting close to our favorite season here in DC, the fall! With this, we're also craving delicious fall bakeries. We have made tons of different banana bread recipes and this is by far the best of them all. The consistency is just perfect, it's not too oily it has no added sugars - all that yummy sweetness comes from the bananas!


Slice it and eat it just as it is. OR, top it with some salted peanut butter and cacao nibs - it could be the absolute best thing in the world!

Serving: About 10 slices Prep time: 10 min Total Time: 60 min

 

Ingredients


Dry Ingredients:

90 g Almond Flour

50 g Unsweetened Shredded Coconut

80 g Walnuts

1 tbsp Psyllium Husk

1 tsp Baking Powder

1,5 tsp Cinnamon

1 tsp Cardamom


Wet Ingredients:

3+1 Bananas (put one aside for topping)

50 ml Coconut Oil

3 Eggs

 

Instructions

  1. Preheat oven to 175°C.

  2. Mix all the dry ingredients in one bowl and all the wet ones in a separate bowl. Make sure to spare one of the bananas for decoration.

  3. Combine the wet and dry ingredients and pour into a bread pan. We use some parchment paper to keep it from sticking, you can also grease it!

  4. Half the "decoration banana" and place on top.

  5. Bake for about 45-50 minutes. If you like it extra crispy on top, you can broil it for 1,5 - 2 min at the end - be cautious though, it burns very quickly :)
