Shakshuka - Vegetarian

Mehdi learned how to cook and is still a go-to recipe that he uses for everyday dinners with Sandra or for more festive moments with friends. One of the key ingredients to make it bring Mehdi back to memories in Tunisia, is the harissa. Harissa is a chili paste that you will find in most Tunisian recipes - it adds heat, smokiness and a Tunisian touch!

Serves: 2 people Prep time: 10 min Total Time: 35 min

 

Ingredients

1 tbsp Olive Oil

1 Onion (chopped)

3 Cloves of Garlic (minced)

4 Tomatoes (cubed)

2 Eggs

2 Anaheim Peppers (sliced)

1 tsp Ras el Hanout

1 tsp Harissa (if you don't have it, cayenne works too)

Salt and Pepper to taste

Parsley (chopped)

 

Instructions


1. Chop the onions into small cubes and mince the garlic.


2. Add some olive oil in a frying pan. Once hot, pan fry the onion and garlic on medium heat until the onions are slightly transparent.


3. Cut the tomatoes into medium cubes (in 8 pieces) and add them to the onion and garlic mix. Stir in the spices (ras el hanout, harissa, black pepper, salt). Cover and cook on low heat for about 15 minutes or until the tomatoes start to soften and release liquid.


4. Cut the anaheim peppers into slices (about 1 cm wide) and add to the mix. Cover and continue to cook on low heat for 5 minutes.


5. Create two depressions in the mix and put the eggs into them. Add some salt and pepper. Cover again and leave until the egg is ready (around 5 minutes), it should be slightly runny.


Serve with chopped parsley on top with a fresh baguette!
