Looking for that perfect cookie recipe? Look no further!

The initial recipe of these cookies come for a summer job that Sandra had in a small local harbor in the middle of Sweden. On rainy days they would bake and offer homemade bakery for the guests. When Sandra first made this recipe for Mehdi, it was love at first bite. After many iterations we have slightly tweaked the recipe to maximize flavor, crispiness and chewiness!

Ingredients

1 cup softened unsalted butter

1 cup of cane sugar

1/2 cup of brown sugar

2 eggs

1/2 cup coconut flakes

1/4-1/2 cups rolled oats

2 3/4 cups all purpose flour

1/2 teaspoon salt

2 teaspoons of vanilla sugar

1 teaspoon baking powder

1/2 teaspoon cardamom

300 grams of milk chocolate

3/4 cups of walnuts

 

Instructions


1. Preheat oven to 170 °C, and prepare a baking tray with parchment paper.


2. Mix the softened butter, cane sugar, brown sugar and eggs in a bowl, just until combined.


3. In a separate bowl, mix together coconut flakes, oats, all purpose flour, baking powder, vanilla sugar, cardamom and salt.


4. Combine the dry and the wet ingredients

into a dough.


5. Cut the chocolate bars and the walnuts into smaller pieces, then add to the mix.


6. Separate the mix into 24 equally large balls and push them out on the prepared baking tray (our baking tray only fits 12 cookies at a time, so we do two rounds in the oven). Bake in the middle of the oven for about 15-20 minutes or until they are golden brown.


Serve with a cup of milk! Enjoy :)
