Pumpkin spiced bakery has become a favorite of ours. It's always tasty, colorful and really gives you that homebaked comfort feeling!
This bread might not look like the most exciting loaf in the world, but believe us, it's super yummy! It reminds Sandra of the Swedish soft ginger bread because of the fragrant flavors and the texture. It's also super moist!
We used butternut squash pure this time instead of pumpkin pure, and it works perfectly fine - based on our own research, it might even be better for flavor and texture in baking! So far, we can't argue that.
We used walnuts, hazelnuts and raisins but you can use whatever add-ins you like. Pecans or almonds would work great as well. You could also skip nuts and fruits altogether!
Serve it with some cream cheese and honey, any type of nut butter, or you know what - it's quite sweet and tasty just the way it is.

Ingredients
75 g Coconut Oil (melted)
90 g Honey
2 Eggs
250 g Pumpkin or Butternut Squash Purée
70 g Oatly Oatmilk
1 1/2 tsp Pumpkin Pie Spice Blend (check out how to make your own here)
1 tsp Baking Soda
1 tsp Vanilla Powder
1/2 tsp Salt
35 g Walnuts
35 g Raw Hazelnuts
35 g Raisins
230 g Spelt Flour
Instructions
Preheat oven to 165°C and grease a loaf pan.
In a large bowl, whisk the melted coconut oil and honey together. Add eggs and whisk until blended.
Whisk in pumpkin/butternut squash purée, oatmilk, pumpkin spice, baking soda, vanilla and salt. Fold in the flour, walnuts, hazelnuts and raisins just until combined.
Pour the batter into your greased loaf pan. You can sprinkle it with some cinnamon if you like, we did :)
Bake for 55 to 60 minutes, or until a toothpick inserted into the center comes out clean Let it cool in the loaf pan for about 10 minutes, before you transfer it to a cooling rack for at least 20 minutes.
