Sweet and Salty Chocolate Peanut Granola

This crunchy Granola recipe is a perfect for a fresh acai/berry/fruit bowl, or creamy yogurt with some fresh berries!


We absolutely LOVE granola, and the crunchier the better. In the US, it's very difficult to find granolas without fishy ingredients, or tons of sugar so we committed to make our own instead. This version is with chocolate, peanut butter and a bunch of healthy nuts.


We have used Hazelnut, Peanut and Walnuts but you can use whatever you like the most. If you are in the US, we highly recommend the Dry Roasted and Unsalted Oregon Hazelnuts from Trader Joe's. They are next level, seriously!

Serves: 10 Prep time: 10 min Total Time: 1 hour

 

Ingredients


Dry Ingredients

200 g Oats

55 g Flaxseed Meal

55 g Almond Meal

50 g Walnuts

50 g Hazelnuts

100 g Peanuts

2 tbsp Cacao Powder 100%

1 tsp Salt


Wet Ingredients

2 tbsp Coconut oil

2 tbsp Peanut Butter

2 tbsp Hot Water

2.5 tbsp Honey


 

Instructions

  1. Preheat oven to 175°C.

  2. Mix all the dry ingredients in mixing bowl and set aside.

  3. Mix the peanut butter and coconut oil with the hot water, and stir until it's combined well. The hot water should melt the coconut oil. Add the honey. Taste it, does it need more salt or spices? We like it pretty salty :)

  4. Place parchment paper on a large baking tray.

  5. Combine the wet and dry ingredients and spread out on the baking tray. For the best result, try to spread it out as much as possible.

  6. Bake for about 15 min, take out to stir, and place it back for another 15 min.

  7. Turn of the oven, open the oven door halfway and leave the granola to cool together with the oven.

  8. Store in a completely sealed glass jar to keep the crispiness!
