Pumpkin Pie Spiced Chia Pudding

A fall favorite to enjoy as a nice breakfast or afternoon snack. It's vegan and contains lots of healthy good stuff :)


This chia pudding give those fall vibes, with the pumpkin pie spice blend and the sweet pecans.


If you don't have pumpkin pie spice blend at home, you can make your own with Cinnamon, Nutmeg, Cloves, Ginger and Allspice - check out our Pumpkin Pie Spice recipe for the exact proportions.

Serves: 1 Prep time: 15 min Total Time: 4 hours 15 min

 

Ingredients

Pecan base

3 tbsp, Pecans

20 g Dates


Chia Pudding

2 tbsp Chia Seeds

1 tsp Pumpkin Pie Spice


Cashew Cream

35 g Soaked (in water for at least 4 hours) Raw Cashews

1/2 tsp Agave Nectar

1/4 tsp Vanilla Powder

 

Instructions


Prepare the Chia Pudding

1. Mix the chia seeds with the oatmilk and pumpkin pie spice in a sealable container and place it in the fridge for at least 4 hours. We usually prepare this step the night before and leave it in the fridge overnight. Important note - make sure to take it out of the fridge after 10 minutes to stir it before putting it back in again. This will help the chia seeds to absorb the liquid evenly and you will have a nice, even chia pudding.


Prepare the Cashew Cream

2. Soak the cashews in water for at least 4 hours, or overnight. Add the soaked cashews, oatmilk, vanilla powder and agave into a food processors and mix well, until it becomes a cream. It may take a few minutes before the cashews are fully "creamed". If it's not sweet enough for your taste, you can add more agave


Prepare the Pecan Base

3. Add pecans and the dates into a food processors and mix just until combined. If you mix it for too long, it will turn into a paste - if that's how you like it, then by all means :) If you like it to have some more texture to it, don't overdo it!


Assembly

4. The result will be best in a glass jar, so you can clearly see the different layers, but you can also put it into any other container. Start with the Pecan Base, add the chia pudding on top and then finally top it off with the cashew cream. You can also add some extra pumpkin pie spice and some chopped pecans on top, just to make it pretty :)
